Pronalfrut frozen fruit pulp: Mandarin pulp

What is mandarin pulp?

Mandarin pulp is the juice and natural fiber of the mandarin (Citrus reticulata), extracted and frozen the same day the fruit reaches our plant in Bogotá. Nothing is added — no water, no sugar, no preservatives, no flavorings. Just Colombian mandarins picked at peak ripeness, ready to blend. For a beverage program or a commercial kitchen, frozen mandarin pulp means fresh-squeezed citrus flavor on demand: no peeling, no juicing labor, no waste.

Alimentos Pronalfrut has produced it since 1997, working directly with Colombian citrus growers and hand-selecting every fruit before pulping, so only first-grade mandarins make it into the bag.

A citrus staple of Colombian daily life

In Colombia, the mandarin is an everyday fruit: sold on every corner, packed in every school lunch, and its juice sits right next to orange juice on the breakfast table. Grown in the mild climate of the Colombian mountains, these mandarins develop high natural sweetness, gentle acidity and a fragrant peel aroma that carries straight into the juice.

Fresh mandarins, though, come with familiar problems for any operation: a short season, fast ripening and slow, labor-intensive juicing. Frozen pulp solves all three at once. We harvest at the peak of the season, pulp and freeze — and you pour consistent mandarin juice 365 days a year.

Flavor profile: sweet, bright and aromatic

Mandarin leads with sweetness, follows with a soft citrus brightness that refreshes without puckering, and finishes on that unmistakable aroma somewhere between floral and zesty. It is one of the easiest flavors on any menu to love: kids drink it happily, and it works just as well in a craft cocktail.

Compared with orange, mandarin is sweeter, more perfumed and lower in acidity — ideal for no-sugar-added beverages and for recipes where a sharper citrus would overpower.

What mandarin brings to the glass

Like any good citrus, mandarin is a natural source of vitamin C and provides beta-carotene, the pigment behind its orange color. Our pulp also keeps the fruit’s own fiber, and because nothing is added, the sweetness you taste is only that of ripe mandarins.

Uses in the kitchen, the bar and foodservice

  • Juices: 100 g of pulp plus cold water yields one tall glass of natural mandarin juice — a nostalgic favorite in Latin American communities across the US.
  • Sorbets and granitas: its natural sweetness needs little or no added sugar, and the color is a vivid, appetizing orange.
  • Cocktails: mandarin sours, mimosas, gin and tonics and spritzes; it adds sweetness and aroma without syrups.
  • Dressings and vinaigrettes: reduced or raw, it brightens salads, ceviches and sauces for poultry and fish.

In hospitality it is a safe bet for breakfast buffets and pool bars: a citrus every guest recognizes, with standardized yield per portion. We already supply hotel operations such as Solar Hotels & Resorts — a client since 2011 — GHL Sunrise and Hotel El Dorado.

Frozen the same day: flavor and nutrients locked in

We pulp and freeze the mandarins the same day they arrive from the farm, at their exact point of ripeness. Rapid freezing forms ice crystals small enough to leave the fruit’s structure intact, so the pulp keeps the aroma, color and much of the nutrition that pasteurized juices — or fruit that sat in storage for days — lose along the way.

In practice that means identical quality in January and in August, exact portioning per glass, and zero spoiled fruit in the trash.
