What is passion fruit pulp?
Passion fruit pulp is the juice and flesh of the maracuyá (Passiflora edulis), extracted and frozen the same day the fruit reaches our plant in Bogotá, Colombia. No added water, no sugar, no preservatives — just passion fruit at peak ripeness, ready to blend, shake or bake with, twelve months a year.
In Colombia this is the tropical classic: few fruits capture the flavor of the country like maracuyá — intense, tart, perfumed and instantly recognizable. At Alimentos Pronalfrut we have processed it since 1997, working with Colombian growers who harvest the fruit just as the skin begins to wrinkle, the sign that its aroma has peaked.
A tart, aromatic flavor profile
Passion fruit opens with a vibrant, almost citrus-like tartness, then unfolds a tropical perfume that fills the room the moment the pack is opened. That balance of sharp acidity and sweet aroma is what makes it so versatile: it wakes up a juice, cuts through richness in a sauce, and gives any creamy dessert real character.
Unlike milder fruits, passion fruit never disappears into a blend. A single spoonful transforms a lemonade, a mousse or a vinaigrette — which is why chefs treat it as a natural flavor booster rather than just another fruit.
What it brings to the table
Passion fruit is a source of vitamin C and provides vitamin A, along with the fruit’s own antioxidant compounds. Because our pulp carries no added sugar, you control the sweetness of every recipe — a real advantage for clean-label beverage programs and health-conscious menus.
Uses in the kitchen, the bar and foodservice
- Juice concentrates: 100 g of pulp with water or milk yields a tall glass of juice with just the right bite.
- Cocktails: passion fruit sours, margaritas and mocktails; the natural acidity replaces part of the citrus and the aroma does the rest.
- Desserts: mousses, cheesecakes and coulis that cut beautifully through any creamy base.
- Dressings: vinaigrettes and sweet-and-sour sauces for salads, fish and pork.
- Baking: cake fillings, ganaches, glazes and macarons with real tropical flavor.
For US buyers, passion fruit sits at the crossroads of two strong markets: mainstream menus discovering tropical flavors, and Latin American communities — especially in Florida — for whom jugo de maracuyá is a taste of home. In hospitality it is a daily-rotation staple; clients like Solar Hotels & Resorts, whom we have supplied since 2011, pour it every morning across their Caribbean properties.
Frozen the same day: consistent flavor year-round
Fresh passion fruit is a difficult ingredient: it ripens fast, travels poorly and swings in price with every harvest. Frozen pulp solves all three problems. By freezing the fruit the day it arrives, at its exact point of ripeness, we lock in the aroma, color and much of the nutrition before the fruit begins to lose them.
For your operation that means year-round supply, identical quality in January and in August, and zero waste — you only thaw the portion you use.
